Is there a way to change the way FA displays dates in the UI?
Currently, our dates are shown day-first, but we’re looking for month-first display:
MM/DD/YYYY HH:mm:ss instead of DD/MM/YYYY HH:mm:ss

Yes it is possible, if you go via the layout editor on your field settings, you should see this:
From there you can click the gear and you will be able to choose the display format
